Made with flour, brown sugar, butter, milk, and eggs, it gets its richness from the addition of 14% sour cream, which gives it an irresistibly tender texture. Ingredients
- 750 ml (3 cups) of all-purpose flour
- 20 ml (4 tsp) of baking powder
- 2.5 ml (1/2 tsp) of salt
- 250 ml (1 cup) of brown sugar
- 180 ml (3/4 cup) of softened butter
- 250 ml (1 cup) of 14% sour cream
- 15 ml (1 tbsp) of vanilla extract
- 125 ml (1/2 cup) of 2% milk
- 3 eggs
- 500 ml (2 cups) of frozen or fresh wild blueberries
Steps
- In a bowl, mix the flour with the baking powder and the salt.
- In a separate bowl, beat the brown sugar and butter together with an electric mixer until creamy. Add the sour cream, vanilla, milk, and eggs. Beat again.
- Combine the dry ingredients with the wet ingredients and stir with a wooden spoon until well blended. Add the blueberries and stir again.
- Spray six 15 cm x 9 cm (6 in x 3 1/2 in) aluminum loaf pans with cooking spray and line them with parchment paper.
- Divide the mixture into the molds and level the surface.
- To freeze. Place the molds on a tray. Place in the freezer for 1 to 2 hours.
- Place the molds in freezer bags. Remove the air from the bags and seal. Place back in the freezer.
- The day before baking. Let the desired quantity of bread defrost in the refrigerator.
- When ready to cook, preheat the oven to 180°C (350°F).
- Bake for 55 minutes to 1 hour, until a toothpick inserted into the center of a loaf comes out clean.
- Remove from the oven and let cool on a wire rack.
