Belén, cook: “The healthiest lasagna for dinner doesn't have pasta or béchamel sauce, but rather 1 can of tuna, 1 zucchini and 2 eggs”

  • Zucchini, 1 unit
  • Canned tuna, 2 drained cans
  • Boiled egg, 1 unit
  • Cottage cheese, 2 tablespoons
  • Fried tomato sauce without added sugar, 4 tablespoons
  • Grated cheese, to taste
Method · 15 min
  1. Step 1 Wash the zucchini and slice it lengthwise as thinly as possible, using a mandoline or a vegetable peeler.
  2. Step 2: Spread the sheets on a plate, without piling them up too much, and microwave them for one minute. They should remain flexible, not fully cooked. Dry them well with paper towels.
  3. Step 3 We prepare the filling, for this we put the well drained tuna, the chopped cooked egg, the cottage cheese and the fried tomato, and mix it all well.
  4. Step 4: Assemble the lasagna in an air fryer or oven-safe dish. Start with a layer of tomato sauce on the bottom to prevent the first layer from sticking, then alternate layers of zucchini slices and tuna mixture until you've used all the filling.
  5. Step 5 Cover the surface with grated cheese and put the container in the air fryer for five minutes, until the cheese is melted and lightly browned.

Traditional lasagna is laborious and heavy, but the version we propose today is quick and effortless, with few ingredients and hidden vegetables.

It's a perfect recipe for families with children or adults who find it difficult to eat vegetables because they think they are boring.

In her video, she presents it directly as a "dinner idea," because unlike traditional lasagna, it is a much lighter and easier-to-digest recipe that will not affect nighttime rest.

The trick: 'dry' the zucchini in the microwave

The important thing to keep in mind is that, since zucchini is more than 90% water, if you make the lasagna with raw zucchini, all that water will come out during the baking process and you'll end up with zucchini soup.

The trick is to cook the sheets for one minute in the microwave so that they soften and release a good part of the liquid, then we can dry them with absorbent paper so that the liquid doesn't water down our dinner.

This small step is the secret to achieving a good result.

With the zucchini already prepared, the rest of the recipe is as easy as mixing the filling ingredients, assembling the lasagna, and cooking it for 5 minutes in the air fryer to melt the cheese. If you don't have an air fryer, the microwave grill function will also work.

The advantage is that neither of them needs to be preheated for this recipe, but if you don't have the option to use them, the grill function of a regular oven will also work.
