B.Ro Birra Burger Bar Rome. Opening Friday, March 6th in Parioli, replacing the former La Scala restaurant and Big Al Wine Bar, this new 3.0 pub will feature burgers, beer, and international street food options like tacos, poké, arrosticini, and, most importantly, savory cones.
The owners—Dany Di Giuseppe, Gino Cuminale, Isidoro Vagnozzi, and Michelangelo Baldini—intended to create a modern pub with an international feel. Chef Alessandro Usai was chosen to fulfill this mission.
The burger menu isn't all American. First of all, the strictly artisanal bread is soft and colorful: some buns are made with green tea or beetroot. There's the American Cheeseburger (13.50) and the B.roBurger (beef, tomato, iceberg lettuce, and B.Ro sauce, 9.50 euros), up to the variations left to the chef's creativity, like the Morocco (duck burger, chickpea hummus, lollo lettuce, and date cream, 16) or the Japan (wagyu burger, sesame, daikon, raw mustard, bean sprouts, lollo lettuce, and wasabi mayonnaise, 21). There's also a tribute to Italy with Carbonara (180g beef and pork burger, scrambled egg, crispy bacon, pecorino cheese, lollo lettuce and gin mayonnaise, 13.50) or the veggie options (green tea bread, smoked veggie burger, confit cherry tomatoes, bean sprouts, iceberg lettuce and ginger mayonnaise, 11.50).
Among the starters, we find the more classic options such as onion rings (4.50), chicken wings (5) and fish & chips (8.50), potatoes with variations on the theme (4.50-5 euros), but also brosticini, that is, beef, mutton or veal arrosticini (1.50-2) and tacos in pure Mexican style (5.50-6 euros). The original novelty of B.Ro however are the Coni: savoury wafer cones with beef tartare and a filling of meat, fish and vegetables, accompanied by all homemade sauces (the chef has studied 11). Find the Yolk and blackberries: beef tartare on a salted cone, egg yolk, blackberries, chives, fresh chilli pepper, honey, chopped almonds and ginger mayonnaise (4) or the Wagyu and anchovies: wagyu tartare, Cantabrian anchovies, red onion chutney, chopped pistachios and fennel mayonnaise (5).
To accompany the burgers, tacos, and even poke, there are fifteen taps with English pumps, offering classic and more original options. They range from the most popular lagers and IPAs to Blanches, Tripels, and Imperial Stouts, with gluten-free options. The beers on tap are rotated frequently, ensuring fresh tastings from breweries from around the world. Another new feature will be the option to order draft beers in 50cl takeaway cans, filled and sealed on the spot using a special machine. In addition to the draft beers, B.Ro also offers a selection of canned beers from world-renowned breweries.
There are 90 seats inside and 60 outside (ready in spring). The design was created by Studio Strato of Rome and includes a bar area, with a monolithic steel counter—the heart of the entire venue—and a large dining room, part of which offers a view of the kitchen. There's also a more secluded lounge area with a long table, decorated with cherry red walls, perfect for special occasions and dinners with friends.
