Following the renewal of Mugaritz's season, Andoni Luis Aduriz's new gastronomic concept is born on the other side of the ocean. Together with Grupo Xcaret XAL, the renowned Basque chef has just unveiled his first restaurant in Mexico, which will open during the first quarter of this year.
The restaurant is nestled within the exclusive boutique hotel La Casa de La Playa, situated on the idyllic Riviera Maya. Its architecture, design, and privileged location surrounded by nature made it a truly captivating choice for the chef to open his new restaurant there.

XAL offers a cuisine of influences inspired by the historic Manila Galleon Route, the first trade route connecting Asia with Europe and the Americas. “At XAL, we wanted to focus on the identity, culture, and gastronomy of Mexico and develop a cuisine of influences where we explore three types of cuisine, Filipino, Mexican, and Basque, enhancing their common elements through Mexican products. At XAL, Mexico becomes the center and heart between Asia and Europe” explains Aduriz.
Based on Andoni's experimental and creative identity, this multicultural temple will serve up the sophistication of Mexican culinary tradition with contemporary techniques. It's an adventure exploring the cultural exchange and intersection between Mexico, the Philippines, and the Basque Country in dishes that will change and evolve with the seasons.
Within its inviting, wood-paneled space, diners can enjoy breakfast and lunch à la carte, as well as delve into the depths of its eclectic experience with a 10-course tasting menu. Among the offerings are creative delights such as a rice tamale with marmitako and raw tuna, or a blue corn taco with duck confit, wild herbs, and crispy pork belly. All of this is paired with a selection of beverages, including sakes, teas, and wines, that blend the three aforementioned cultures to perfectly complement the culinary experience.
