Truffle oil is often fake, and you pay an exorbitant price for being deceived.

Many chefs and critics don't even try it, because truffle oil is usually made with chemicals instead of real truffles.

Truffle aroma, often presented as oil, is considered a joke in the culinary world. Many chefs, hospitality professionals, food critics, and experienced diners won't even try it.

The reason is that truffle oil is often fake. Not only do you not taste real truffles when using this so-called oil, but you also pay an exorbitant price for a deception. In short, it's a scam.

Olive oil comes from olives, and avocado oil from avocados. Logically, truffle oil should come from truffles, but that's almost never the case. What appears in dishes like macaroni and cheese, French fries, or truffle pizza are chemical substances that barely mimic the earthy aroma of a real truffle, as if inhaled through a sheet of hot plastic. It's one of the most despicable deceptions: it makes diners believe they're enjoying a luxury when in reality they're receiving little more than adulterated canola oil. If it appears on a menu, someone either doesn't know what they're doing or is trying to deceive.

White and black truffles are true luxuries. Their price is due to their rarity and the specialized skills required to harvest them. For a similar reason, caviar is usually avoided in restaurants and is best enjoyed at home. Truffles can also be enjoyed at home: ideally, they should be grated very finely and used as a garnish on fresh pasta.

Winter truffles from the Périgord region, available seasonally, are expensive, but a small amount is enough for a garnish. A high price on the menu may mask a larger profit margin and less transparency regarding the product's origin.
