Asparagus Apple Salad
Blue cheese vinaigrette makes a wonderful dressing for this Asparagus Apple Salad!
- ¼ cup (1 ounce) crumbled blue cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons white vinegar
- 1 tablespoon water
- 1 teaspoon granulated white sugar
- 2 teaspoons Dijon mustard
- 1 teaspoon extra virgin olive oil
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 cups (2-inch) diagonally cut asparagus
- 4 cups torn butter lettuce ((or red leaf))
- 2 cups thinly sliced Gala apple
- additional blue cheese crumbles, (optional)
- In a small bowl, whisk together the dressing ingredients.
- In a medium pot of boiling water, cook the asparagus for just 1 minute. Drain and rinse under cold running water; drain and pat dry.
- In a large bowl, combine the asparagus, lettuce, and apple. Drizzle with vinaigrette; toss gently to coat. Top individual servings with blue cheese crumbles, if desired.
You’ve gotta love a simple salad recipe. This asparagus apple salad is one of those! There are only three main ingredients (asparagus, lettuce and apples). And then the vinaigrette is super easy to make too. The asparagus are cooked briefly, but that’s the extent of the “work” required to make this delicious salad.

PREPARE THE SALAD:
In a large bowl, combine the asparagus, lettuce, and apple. Drizzle with vinaigrette; toss gently to coat.
Top individual servings with blue cheese crumbles, if desired.
Butter lettuce is a lovely lettuce to use for a salad. But you can certainly substitute another kind of lettuce, if you’d like. The crunch of the apples is an appealing feature as well. And blue cheese really brings it all together. Enjoy!
