* First, wash, peel, and core the apples. If you're using organic apples, you can keep the peel; the final appearance of your butter will be a bit more rustic. Cut the apples into chunks and place them in a heavy-bottomed or nonstick pan with the lemon juice and cinnamon.
* Let the apple butter cook over medium heat for 30/40 minutes until the apples are cooked, then blend it with an immersion blender.
* Transfer to a sterilized glass jar and let it cool before consuming. If you want to store it, close the jar and let it cool upside down to create a vacuum.
Once opened, keep refrigerated.
