Homemade Sweet Popcorn - Pilar Hernández's Chilean Kitchen

A classic when you go to the movies in Chile is Chilean popcorn. It took me a while to get used to the fact that here in the US, the popcorn you find in movie theaters is salted with butter... It's not fair! At least now I can make it at home to enjoy while watching movies whenever we want.

  • 1 cup of dried popcorn kernels
  • 1 cup or 225 grams of butter
  • 1/2 cup corn syrup or liquid honey or agave
  • 2 cups of brown sugar
  • 1 teaspoon of coarse salt or 1/2 teaspoon of fine salt
  • 1/2 teaspoon of baking soda
  • 1 teaspoon of vanilla extract

  1. I popped the popcorn kernels in the microwave. I put 1/4 cup of kernels in a paper bag (like the kind used for bread) and folded the top over several times to seal it. I microwaved it on full power; in my case, it took 2 minutes and 35 seconds. I carefully opened the paper bag, emptied the popcorn into a large bowl, and repeated with the remaining kernels.
  2. Preheat the oven to 250F or 120C. Prepare two pudding molds or baking tins with silicone paper.
  3. In a medium saucepan, melt the butter over medium-high heat. Once melted, add the honey or corn syrup, brown sugar, and salt. Stir to combine and bring to a boil, stirring occasionally.
  4. Once it comes to a boil, let it boil for 5 minutes without stirring. Turn off the heat and add the baking soda and vanilla extract. Be careful because it will rise and bubble.
  5. Pour the mixture over the popcorn and using salad spoons stir and mix as well as possible.
  6. Divide the popcorn into two halves, place each half on baking sheets lined with parchment paper, and spread them out as evenly as possible. Bake for 50 minutes, removing from the oven and stirring every 10 minutes. After 45 minutes, remove some popcorn, let it cool, and taste it; it should be crisp and dry.
  7. Remove from the oven and let cool completely on a wire rack before separating with your hands and packaging or serving.
  8. They keep very well for up to 1 week in an airtight container; my mom used washed and dried Nido milk cans.
