Leftover meat sandwich made from homemade pita bread

To make this leftover meat sandwich from homemade pita bread, put the flour in the bowl of a food processor, add the sugar and crumble the yeast. Pour in the water and milk, then start kneading the dough. When it starts to come together, add the olive oil, yogurt and salt.

Then divide it into 10-12 pieces on a floured surface and carefully shape them into small balls. Cover them so that the top does not dry out, and flatten them one by one into discs, then place them on a baking sheet lined with baking paper and let them rest for 10 minutes before baking. Sprinkle with a little flour and bake in an oven preheated to 250 degrees for 7-8 minutes.

For the filling, slice the purple onion, mince the garlic, and grate the carrot. Sauté the vegetables in olive oil in a pan over medium heat, then add the shredded roasted chicken. Season with coriander, cumin, salt, pepper, and sprinkle with chopped parsley.

Mix the sauce ingredients in a bowl, slice the tomatoes, and tear the lettuce into leaves. To serve, open the pitas, fill with the filling and vegetables, and finally drizzle with the sauce.
