Yellow rice is a popular dish, especially during special occasions. In Indonesian tradition, this bright yellow rice has become a symbol of gratitude, prosperity, and happiness.
Yellow rice is usually the main dish at special events, from birthdays, business inaugurations, to the tumpeng tradition which is full of philosophical meaning.
In terms of taste, yellow rice has a savory flavor and a distinctive aroma. The combination of coconut milk, turmeric, pandan leaves, and lemongrass creates a special flavor.
If you want to make your own yellow rice at home, you can use a rice cooker. You can also make some adjustments, such as using ground turmeric instead of fresh turmeric or using liquid instant coconut milk instead of fresh coconut milk.
For turmeric powder, you can use about 2 teaspoons (tsp) for the following recipe. For instant coconut milk, dissolve it in water until it reaches a medium consistency.
Oh, and if you're going to make tumpeng (rice cone), you can make the yellow rice fluffier. Reduce the amount of rice by 10% and replace it with sticky rice. The amount of coconut milk should also be adjusted to suit the type of rice used.
When served, you can add a variety of your favorite side dishes. Typically, yellow rice is served with stir-fried tempeh, omelet, spicy egg, fried rice noodles, or even fried chicken.
