Cottage Cheese Tzatziki with Sausages
Super quick and easy- we’re making a high-protein tzatziki by using cottage cheese. It all happens in 20 mins. Super quick, extremely easy, incredibly eatable.

- 1 Cucumber
- 300g Full-Fat Cottage Cheese
- 1 Garlic Clove
- 1 Lemon
- 8 Sausage
- 350g Roasted Red Peppers
- 15g Fresh Mint
- 1 White Onion
- 3tbsp Balsamic Vinegar
Method · 25 min
- Preheat the oven to 200°C. Coarsely grate the cucumber into a bowl, season with salt, set aside.
- Add the cottage cheese into a bowl, season with salt and finely grate the garlic in.
- Place the sausages onto a tray with a drizzle of olive oil, roast until fully cooked, 15-20 mins.
- Meanwhile, squeeze as much liquid from the cucumbers as possible, then, stir into the cottage cheese. Zest half the lemon into the mixture, taste and season with salt, lemon juice and pepper, if needed.
- Drain and thinly slice the peppers.Trim and thinly slice the onion, place into a strainer and wash under cold running water until crisp. Pick the mint leaves. Add all of the onion, peppers, and mint to a bowl with the balsamic vinegar and olive oil. Season with salt and pepper. Toss and set aside.
- Share the tzatziki cottage cheese between plates, top with the sausages, and serve with the salad.
