Homemade octopus: a recipe from Chinappi Restaurant

The summer cravings are coming to the table. And what's better than a good seafood dish? Like the one Stefano Chinappi, owner of the restaurant on Via Valenziani in Rome, shares with us the secrets of his authentic octopus.

Ingredients

Real octopus Oil Parsley Lemon Salt Pepper Garlic.

Procedure

Clean the octopus, removing the innards, mouth, and eyes. Place it in a pot filled with water and cook gently for 40-50 minutes, then let it cool. Place the octopus whole, without adding any fat, in a nonstick griddle or pan. Drizzle with oil and brown on both sides. Cooking time should be one minute, maximum one and a half. In a bowl, season the octopus with oil, salt, pepper, lemon juice, parsley, and garlic, then stir the octopus into a creamy sauce. Arrange on a plate and serve while still hot.
