Light, colorful, and textured, this pearl couscous, halloumi, and honey shrimp salad is a perfect light meal, especially welcome after the holidays when we want to return to simpler, more balanced fare. The pearl couscous provides a lovely texture. The grilled halloumi adds a salty, slightly crispy touch that makes every bite utterly irresistible. The juicy, fragrant honey shrimp complete the dish with a perfectly balanced sweet and savory combination. Served warm or cold, this salad becomes a complete meal that combines pleasure, color, and sweetness without being heavy or compromising on flavor.

Ingredients

250 ml (1 cup) of dry pearl couscous

500 ml (2 cups) of baby spinach

10 cherry tomatoes, halved

1/2 small red onion, diced

3 Lebanese cucumbers, sliced ​​into rounds

15 ml (1 tbsp) of olive oil

1 package of halloumi (grilling cheese) weighing 200g, cut into pieces

16 medium-sized (size 31/40) raw and peeled prawns

45 ml (3 tbsp) of honey

15 ml (1 tbsp) lemon zest

Salt and pepper to taste

For the vinaigrette:

60 ml (1/4 cup) of olive oil

30 ml (2 tbsp) of fresh lemon juice

30 ml (2 tbsp) of sun-dried tomato pesto

10 ml (2 tsp) chopped garlic

5 ml (1 tsp) dried parsley

2 chopped green onions

Salt and pepper to taste

Steps

In a saucepan of boiling salted water, cook the couscous according to the package directions until al dente. Drain. Cool under cold water and drain again.

In a salad bowl, mix the vinaigrette ingredients. Add the couscous, spinach, tomatoes, onion, and cucumbers. Stir.

In a large skillet, heat the oil over medium heat. Brown the halloumi pieces for 1 minute on each side. Transfer to a plate and let cool slightly.

In the same pan, brown the shrimp for 1 to 2 minutes on each side.

Add the honey and lemon zest to the pan. Season with salt and pepper. Continue cooking for 1 to 2 minutes, until the shrimp are caramelized.

Add the halloumi and shrimp to the salad bowl. Stir.
