These revamped hot chocolate muffins, in a more nutritious version, are exactly the kind of healthy muffins you love to keep on hand, especially during the colder months. Moist, comforting, and easy to make, they're an excellent winter snack, perfect for busy mornings or afternoon cravings. This simple treat relies on a hot chocolate mix for a rich chocolate flavor, balanced by Greek yogurt, which adds a tender texture and protein. The rich dark chocolate completes the dish without being overly sweet.
Ingredients
- 250 ml (1 cup) of whole wheat flour
- 125 ml (1/2 cup) all-purpose flour
- 125 ml (1/2 cup) hot chocolate mix
- 10 ml (2 tsp) of baking powder
- 1.25 ml (1/4 tsp) of salt
- 60 ml (1/4 cup) of softened unsalted butter
- 60 ml (1/4 cup) of sugar
- 2 eggs
- 60 ml (1/4 cup) of 2% plain Greek yogurt
- 125 ml (1/2 cup) of 2% milk
- 125 ml (1/2 cup) of 70% dark chocolate pieces
- 125 ml (1/2 cup) of mini marshmallows
Steps
- Preheat the oven to 190°C (375°F).
- In a bowl, mix the flours with the hot chocolate mix, baking powder and salt.
- In a separate bowl, cream the butter and sugar together using an electric mixer. Add the eggs one at a time, beating well after each addition. Add the yogurt and milk, then beat again.
- Combine the dry ingredients with the wet ingredients and stir with a wooden spoon until well blended. Add the chocolate pieces and marshmallows. Stir.
- Butter the twelve wells of a muffin tin, then divide the mixture among them. Bake for 18 to 20 minutes, until a toothpick inserted into the center of a muffin comes out clean.
