“Chick” egg tarts

Fall in love with these adorable "chick" egg tarts from Quebec, as fun to make as they are to eat. Made with frozen tart shells, they're filled with a simple mixture of sugar, flour, eggs, butter, and milk, flavored with vanilla or almond extract.

Ingredients

  • 24 frozen tartlet crusts
  • 250 ml (1 cup) of sugar
  • 30 ml (2 tbsp) all-purpose flour
  • 3 eggs
  • 60 ml (¼ cup) melted butter
  • 5 ml (1 tsp) of almond extract or vanilla extract
  • 250 ml (1 cup) of milk
  • 48 candy eyes
  • 80 ml (1/3 cup) of orange and yellow chocolate candies (like Smarties)
  • Mini decorative chocolate-flavored candies.

Steps

  • Preheat the oven to 205 °C (400 °F) and place the rack in the bottom of the oven.
  • Place the tartlet shells on a large baking sheet lined with parchment paper. Pre-bake in the oven for 5 minutes. Remove from the oven.
  • Set the oven temperature to 163 °C (325 °F).
  • In a bowl, mix the sugar with the flour. Add the eggs and whisk for 1 minute.
  • Add the melted butter, almond extract and milk. Stir with a wooden spoon until well combined.
  • Strain the mixture through a fine sieve into another bowl. Carefully pour the mixture into the pre-baked tartlet shells.
  • Bake for 18 to 20 minutes on the bottom rack, until the filling is set and the crusts are lightly golden.
  • Remove from the oven and let cool completely on a wire rack.
  • Decorate each tartlet with two candy eyes. Add three chocolate candies to form the beak and wings, then a few mini decorative candies to form the eyebrows and feet.
