Sometimes, a warm bowl is all it takes to transform an ordinary supper into a soothing moment. Dumpling and edamame soup achieves this effect while remaining a simple meal that emphasizes balance and quick preparation. Inspired by an Asian dish, it features tender chicken and pork dumplings, which can be substituted with any flavor you like, if desired. This star ingredient is combined with pho broth, carrots, spinach, green onions, and edamame. The edamame adds texture, color, and protein. Above all, each fragrant bite becomes a little balm for the soul.

Steps
In a saucepan of boiling water, cook the dumplings for 4 to 5 minutes. Drain.
In the same pan, heat a little sesame oil over medium heat. Brown half of the dumplings for 1 minute on each side. Set aside on a plate and repeat with the remaining dumplings.
Return the dumplings to the pan and pour in the broth. Bring to a boil, then cook for 1 minute.
Add the edamame, carrot and green onions. Continue cooking for 3 to 5 minutes over low-medium heat.
Add the spinach and stir.
