A classic with a twist, this pork meatloaf gets a fresh twist with the addition of spinach, which adds color and sweetness. This family-friendly dish includes other simple ingredients like ground pork, leek, quick-cooking oats, eggs, and garlic. Easy to assemble, this spinach recipe is perfect for weeknights. It's also an economical meal that delivers a nutritious and balanced result. Served warm with vegetables or mashed potatoes, it makes a perfect comforting supper. Bonus: it freezes beautifully.

Also plan for:

15 ml (1 tbsp) chopped garlic

Optional:

Mild Cajun spices 30 ml (2 tbsp)

Steps

Preheat the oven to 205°C (400°F).

In a bowl, combine the ground pork with the leek, oatmeal, eggs, spinach, garlic and, if desired, Cajun seasoning. Season with salt and pepper and stir.

Transfer the mixture to a loaf tin lined with parchment paper, then level the surface.

Bake for 50 to 55 minutes, until the inside of the meat has lost its pinkish hue.
