  1. Start by thoroughly washing the new potatoes under running water to remove any remaining dirt. Then, pat them dry with a clean cloth. Transfer the thoroughly dried potatoes to a large bowl and season with extra virgin olive oil, salt, and pepper to taste.
  2. At this point, add the fresh rosemary needles and garlic clove to the bowl. Mix everything thoroughly, ensuring the dressing evenly coats each potato. Finally, arrange the new potatoes in a large baking dish, preferably in a single layer.
  3. Finish by adding whole rosemary sprigs to the baking dish, which will release an exceptional aroma during cooking. Bake in a preheated oven at 200°C (400°F) for 30 minutes, shaking the pan lightly halfway through to evenly brown the potatoes. Remove from the oven when your new potatoes have developed a super crispy crust on the outside and are tender on the inside.
