Hot as hell? The trick to a fresh and delicious buckwheat salad in 10 minutes!

The mid-August sun is unforgiving, and turning on the stove to prepare lunch seems almost a heroic feat. Yet, sacrificing flavor isn't an option, especially when you can serve a delicious cold buckwheat salad.

  • Buckwheat 200 g
  • 2 medium-sized cucumbers
  • Radishes 10
  • Yogurt greco bianco 150 gr
  • Lime zest and juice 1
  • Chives 1 bunch
  • Extra virgin olive oil (EVO)
  • Fine salt
  • Black peppercorns
Method · 30 min
  1. Place the buckwheat in a fine-mesh strainer and rinse thoroughly under cold running water. This step is essential to remove impurities and excess saponins, thus eliminating any trace of bitterness. Plunge the buckwheat into plenty of boiling salted water and cook for about 15 minutes, following the cooking time on the package. Remember to drain it al dente, so the grains retain their pleasantly crunchy texture. Once drained, let it cool completely. The trick to keeping it from sticking is to immediately spread it out on a large tray. Add a very light drizzle of extra virgin olive oil and stir gently to separate the grains perfectly.
  2. Thoroughly wash the cucumbers and radishes under running water. Dice the cucumbers into small cubes. If the peel is tender and organic, you can keep it; otherwise, I recommend peeling them partially into strips. Cut the radishes into very thin slices or small wedges, maximizing their natural crunch with every bite. Finally, finely chop the fresh chives using a sharp knife or handy kitchen scissors.
  3. Now prepare the accompanying sauce: pour the Greek yogurt into a small bowl. Add the grated zest and squeeze the lime juice for a fresh, citrusy note. Add a pinch of salt and a generous grind of freshly ground black pepper. Stir vigorously with a spoon until the mixture is perfectly smooth and velvety.
  4. In a large bowl, combine the cold buckwheat, cucumber cubes, radish slices, and chopped chives. Season with a drizzle of extra virgin olive oil and a pinch of salt. For the yogurt sauce, you have two options: you can add it directly to the salad before serving, or serve it separately in a gravy boat. By serving it separately, each diner can customize their dish to their own taste!

This dish is the perfect answer to summer energy slumps. Thanks to its unmistakable toasted flavor, buckwheat creates a protein-rich and naturally gluten-free base, ideal for creating light yet highly nutritious cold buckwheat dishes.

What really makes the difference is the dressing. Forget the usual heavy mayonnaise: here we use a refreshing yogurt and lime spread. A clever idea that recalls the vibrancy of the famous original Greek tzatziki or a delicious creamy yogurt salsa verde.

To achieve the perfect texture, remember to rinse the grains well before cooking, eliminating any bitterness. Then, cool them on a large tray: this is the secret to a perfect summer buckwheat salad with well-separated grains that are never sticky.

Crispy cucumbers and finely chopped radishes complete this refreshing treat.
