Grove muffins

Ingredients · Servings 6
  • 2 pieces of egg
  • 150g sugar
  • 1 dl oil
  • 2 pieces of apple
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla sugar
  • 100 g fine whole wheat flour
  • 75 g oatmeal
  • 100g blueberries
  • 3 tablespoons large oatmeal
Method · 30 min
  1. Beat eggs and sugar until fluffy. Whisk in the oil.
  2. Peel and grate the apples. Add the grated apples to the egg dish.
  3. Then mix in baking powder, vanilla sugar, whole wheat flour and oatmeal. Let the dough stand and swell for 20 minutes.
  4. Divide the batter into large muffin tins so they are 2/3 full. Add blueberries and press them lightly into the batter. Sprinkle with large rolled oats for decoration.
  5. Bake the muffins in the middle of the oven at 180 °C for 15-20 minutes, or until golden and cooked through.

Grove lunsjmuffins

Coarse lunch muffins are made from oatmeal, whole wheat, grated apple and blueberries. These muffins are great to have when you need a little energy boost during the day. They are great to take with you on a trip or in your lunchbox at school or work. The recipe makes 6 large muffins. It is fine to use smaller muffin tins, but remember that the baking time will be a few minutes shorter. Check with a skewer when they are done. Recipe: Kristine Ilstad/ Det søte liv.
