Sandwich biscuits

Ingredients · Servings 30
- 375 g wheat flour
- 0.5 tsp horn salt
- 250g butter
- 125g sugar
- 1 egg yolk
- 1 egg
- 50 g almonds
- 3 tablespoons granulated sugar
- 1 tablespoon cinnamon

- Find a spacious baking bowl. Mix the flour and rock salt. Crumble in the butter until it looks like damp sand. Add the sugar and egg yolk and quickly combine to form a smooth dough. Wrap and refrigerate for at least 30 minutes so it is easy to roll.
- Roll out the dough thinly, approx. 2 mm, on a lightly floured board. Cut out round cookies and place on a baking sheet lined with baking paper. Brush with beaten egg. Sprinkle with almonds, granulated sugar and cinnamon.
- Bake in the middle of the oven at 175 °C for approx. 10-13 minutes until lightly golden around the edges. Cool on a wire rack. Store in a sealed cookie tin.
Smørkjeks are what were previously called "jødekaker" (Jewish cookies), and are a traditional Norwegian pastry. The round and sweet biscuits are topped with cinnamon and sugar, and you can also add almonds or other nuts on top. Maybe this will be one of seven kinds this year?
