Healthy waffles with carrot and oatmeal
If you want healthy waffles, you can try this recipe. It uses whole spelt flour, which is a much healthier type of flour than regular wheat flour. Oatmeal, carrot and sesame seeds give the waffles more texture and make them even juicier.

- 3 dl oatmeal
- 2 dl spelt flour
- 4 tablespoons sugar
- 1 teaspoon baking powder
- 0.5 tsp sea salt
- 2 teaspoons cardamom
- 2 tablespoons sesame seeds
- 1 carrot
- 5 dl whole milk
- 2 pieces of egg
- 5 tablespoons sunflower oil

- Start by mixing oats, flour, sugar, baking powder, salt, cardamom and sesame seeds in a large bowl. Grate the carrot into the flour mixture.
- Stir in milk until the mixture is lump-free.
- Whisk together the eggs and oil or melted butter and mix into the batter. Let the batter rise for 15-30 minutes before baking the waffles.
- Serve with Greek yogurt, fresh berries and pomegranate seeds or your favorite topping!
