Raw marinated halibut with avocado, green chili and elderflower

- 300 g halibut
- a little salt
- 40 g green chili
- 150 g neutral oil
- 70 g spinach
- 40 g elderflower juice
- 10 g lemon juice
- 5 g lime juice
- 5 g chili sauce
- 5 g soyasaus
- 60 g savoy cabbage
- 30 g shallots
- 10g ginger
- 10g parsley
- 1 piece avocado
- 5 g chili sauce
- 1 piece of lime
- 3 g sea salt
- some sesame seeds
- some fresh herbs
Method · 30 min
- Cut the halibut into thin slices.
- Place the slices on a tray and sprinkle lightly with salt.
- Place green chili, neutral oil and spinach in a blender and blend until smooth.
- Pour into a saucepan, bring to a boil, then reduce the heat and simmer until the oil turns a clear, intense green color.
- Cool.
- Mix elderflower juice, lemon juice, lime juice, green chilies, and soy sauce in a blender.
- Taste and adjust acidity/sweetness.
- Stir in green chili oil to desired balance.
- Cut the cabbage into small cubes.
- Finely chop the shallots and parsley.
- Grate ginger finely.
- Mash the avocado and fold in the other ingredients.
- Season with lime juice, green chilies and sea salt.
