Craving piadina but don't want to cheat? Here's the trick to making a protein-rich Greek yogurt piadina in just a few minutes, super light and without any leavening

Forget the biblical wait for leavening and the specter of guilt that often accompanies last-minute baked goods. There's a way to revolutionize your lunch or dinner without compromising on an impeccable nutritional profile and the pleasure of biting into something extraordinarily soft.

Ingredients · Servings 4 pieces
  • Flour 00 300 gr
  • Greek yogurt 300 gr
  • Extra virgin olive oil (EVO) 1 tablespoon
  • Fine salt 1 teaspoon
  • Instant baking powder for savory pies 1 teaspoon
Method · 22 min
  1. Pour the flour into a large bowl, then add the instant yeast and salt. Add the extra virgin olive oil and begin kneading with your hands directly inside the bowl, combining the ingredients until all the dough is incorporated.
  2. Once the dough has absorbed all the liquid, transfer it to a pastry board. Knead vigorously by hand for about 5 minutes, until the dough is smooth, firm, and non-sticky. Cover the dough with a clean cloth and let it rest for 10 minutes at room temperature. This step is essential for relaxing the gluten and making the dough easier to roll out. After the resting time, divide the dough into 4 equal portions. Using a rolling pin, roll out each portion on a lightly floured surface. Continue rolling until you have thin discs, about 2 or 3 millimeters thick.
  3. Heat a nonstick pan over medium heat. Once it's hot, add the piadina and cook it over medium heat for a couple of minutes. As soon as you see the first bubbles appear on the surface, gently flip it with a spatula and brown the other side for just one minute. Remove it from the heat and immediately add your favorite fillings, while it's still piping hot and super pliable!

This Greek yogurt protein flatbread was born from this very need: combining maximum convenience with a remarkably healthy nutritional profile. Preparing this dough takes just a few minutes and no effort, resulting in elastic discs that are perfect for rolling, remaining soft without breaking at the first bite.

If you love the tradition of flatbreads but are short on time today, this version will become your ace in the hole. We often gravitate toward the unmistakable flavor of the classic piadina romagnola, or seek a lighter alternative like the lard-free piadina. But when the goal is to get a full complement of clean macronutrients with zero waiting time, Greek yogurt proves to be the magic ingredient, capable of replacing the fat and providing perfect hydration.

There's no shortage of options to enrich your weekly menus. If you follow a specific diet or have specific dietary needs, you might also find gluten-free protein chickpea flatbread extremely appealing, or try the unique texture of mock cheese sandwiches with Greek yogurt for a guaranteed-successful, impromptu dinner saver.

Varying your carbohydrate intake is a great way to avoid getting bored. You can savor a taste of the Near East by preparing soft pita bread, ideal for generous fillings, or opt for the extraordinary, age-old lightness of Sardinian carasau bread, perfect paired with a protein source and a drizzle of raw olive oil.

Prepare your nonstick pan: just a few minutes of cooking are enough to see the first bubbles appear and transform a simple loaf into the perfect base for your favorite ingredients. Let's get to work!
