Ingredients · Servings 4
  • 500 g of flour —strong or bread flour—
  • 10 g of fresh yeast —or 3.3 g of dried baker's yeast—
  • 300 g of water
  • 50g of extra virgin olive oil
  • 10 g of salt
  • 1 tablespoon of extra virgin olive oil to drizzle on top
Method · 2 h 30 min
  1. Put the flour in the bowl of the mixer, crumble the yeast, add the water, extra virgin olive oil and salt and knead with your machine for 5 minutes.
  2. After this time, sprinkle some flour on your work surface, place the dough on it, and using a spatula, shape it into a ball. Put it in an oiled bowl and let it rest for 1 hour. If you find the dough is very sticky (not all flours react the same way), let it rest for another 5 minutes before shaping it into a ball. You'll see that after this time the dough will be smoother and easier to work with. Cover the bowl with plastic wrap, touching the surface of the dough but without pressing down on it.
  3. After that time, sprinkle some flour on the work surface, turn the dough out onto the counter, gather the dough from the edges, and fold it towards the center as shown in the video. Turn it over.
  4. Let the dough ball rest for 5 minutes on a sheet of baking paper covered with a cloth (make sure it doesn't smell like fabric softener). Gently flatten it with your hands, then place the dough, still on the baking paper, on a baking tray, cover it with a cloth, and let it rest for approximately 45 minutes.
  5. Preheat the oven to 250ºC, top and bottom heat, 15 minutes before putting it in the oven.
  6. Just before putting the dough in the oven, place 1 tablespoon of oil on its surface and press your fingers in so that the oil penetrates the dough a little.
  7. Bake at 220ºC for about 35 minutes, more or less, depending on how toasted you like your bread. After this time, remove it to a wire rack.
