Tomato, cheese and gherkin flowers
When we think about decorating our tables for Christmas, now that it's just around the corner, it almost never occurs to us that we can also do it with edible "little treats." - Make a cut in the gherkins halfway through, but without cutting all the way through, so that they can open up and be stuck on the skewer; this will make them look like the outer leaves of the flower.
- We do the same with the cherry tomatoes, cutting them in half without separating the two halves completely, and we pierce them by placing them inside the gherkin.
- Finally, place a cube of goat cheese on the skewer, inserting it inside the tomato, and that's it. As I said before, it takes no time at all to have the flower finished.
- Now I'll give you a couple of options to enhance the skewers. For example, it's delicious to add a rolled-up anchovy between the gherkin and tomato; if you like them, it adds a lot more flavor. Alternatively, you can dress them by drizzling a little olive oil mixed with finely chopped oregano or basil—it doesn't matter if it's fresh or dried—and a pinch of salt if you're not using anchovies.
