Italian strawberry jam crostata, the perfect dessert for Valentine's Day
There are few desserts as comforting as a strawberry jam tart: it smells like home, like simplicity, and like those afternoon snacks you always crave. In Italy, this tart is called crostata and is made with pasta frolla, which, to put it simply, is like shortcrust pastry…
Ingredients · Servings 10
- 350 g of flour
- 1 egg
- 1 egg yolk
- 150 g of sugar
- 150g of butter (or margarine), at room temperature
- 1/2 packet of baking powder
- Approximately 350g of strawberry jam (or your preferred jam or preserve)
Method · 1 h 40 min
- Sift the flour together with the baking powder (like Royal) and transfer it to a large bowl.
- Add the sugar, egg, and egg yolk. Incorporate the softened butter in pieces and knead with your hands until you obtain a smooth dough.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 45 minutes.
- After resting, leave the dough at room temperature for 5 minutes. Meanwhile, preheat the oven to 180°C (350°F). Flatten it slightly with your hands and roll it out on a floured surface until it is about 4 mm (1/8 inch) thick (add a little flour if it sticks).
- Grease the mold well and place the dough inside. Press gently into the bottom and up the sides to ensure it adheres, and trim off any excess.
- Gather the scraps, stretch them out again, and cut out hearts with the cookie cutter.
- Spread the jam evenly over the base and distribute the hearts over the entire surface.
- Bake for 30–35 minutes, until the crust is golden brown. Remove the tart from the oven and let it cool before serving.
