Chicken and mango salad

When I roast chicken, I always add a little extra. It's what I use for these salads that are so popular at home. Today's salad, chicken and mango, is so easy it's not even for complete beginners: it's perfect for those of you just starting out in the kitchen.

Ingredients · Servings 4
  • A bag of sprouts
  • 1 mango
  • 1 roasted chicken breast
  • 1 small can of corn
  • A few grains of salt
Method
  1. Peel the mango, and using a melon baller, scoop out some mango balls. Set aside.
  2. Cut open the chicken breast, which we will have removed the skin from.
  3. Mix the sprouts with the chicken breast, mango, and corn. Add a few grains of coarse salt.
  4. Serve with a pink sauce that we prepare as follows:
  5. We'll start with the base sauce, which is mayonnaise. There are two ways to make it: by hand, and with an electric mixer or any other food processor. It turns out wonderfully with a Thermomix, and you can find the recipe in the basic cookbook, but for the amount I make, I prefer using a classic mixer.
  6. I dismiss the hand-made method, because in the world we live in we are not going to emulsify this type of sauce by hand, when we have a blender, with which it turns out just as delicious.
  7. The egg shouldn't be too cold. It's best to take it out of the refrigerator a little while beforehand: this will prevent the mayonnaise from curdling.
  8. Pour the egg and a little oil into a narrow container, taking care not to break the yolk.
  9. Begin whisking with the whisk. Keep it at the bottom at first, then slowly raise it as the mixture emulsifies. Lower and raise it again, gradually adding the oil as needed, depending on the desired thickness, until it reaches the right consistency.
  10. When it's done, add the salt, and the drops of lemon juice or a splash of vinegar, to taste, to finish the blending process.
  11. Add ketchup to taste, the juice of half an orange, a tablespoon of brandy, and mix to this mayonnaise.
  12. Use a good quality store-bought mayonnaise.
  13. Put 4 tablespoons in a bowl.
  14. Add a drizzle of extra virgin olive oil, 2 tablespoons of ketchup, a tablespoon of orange juice and a tablespoon of brandy, and mix.
