Homemade sweet and sour barbecue sauce: thick, smoky and perfect for glazing

Today we're going to make a homemade sweet and sour barbecue sauce, super easy and ready in under 30 minutes. The perfect solution for transforming simple dishes into irresistible, intensely flavorful creations.

Ingredients · Servings 6
  • 160g of ketchup
  • 55 g of sugar (white or brown)
  • 120 g of water
  • 20 g of manzana vinaigrette (or red wine vinaigrette)
  • 10g of extra virgin olive oil
  • 2 teaspoons of smoked paprika
  • Black pepper (amount to taste)
Method · 25 min
  1. Weigh all the ingredients. Have them ready to make preparing the sweet and sour sauce more organized, simple, and quick.
  2. Pour the water into a small saucepan and add the sugar (white or brown). Heat over medium heat, stirring continuously, until completely dissolved and the base is smooth, without any grains.
  3. Add the ketchup, extra virgin olive oil, apple cider vinegar, smoked paprika, and a turn of black pepper. Mix well until you have a smooth mixture.
  4. Bring the sauce to a gentle boil and cook for 18–20 minutes, stirring often to prevent it from sticking to the bottom and to ensure it reduces properly.
  5. Check the texture: it should be thick, shiny, and intensely colored. Turn off the heat when it has a smooth, velvety finish.
