Homemade cottage cheese with just two ingredients
For a long time, we've associated it with supermarket refrigerators, but cottage cheese can be made at home much more easily than it seems. And the most surprising thing is that all you need is milk and a little vinegar to get those characteristic small grains of fresh cheese.

- 1 liter of whole milk (or raw milk)
- 3 tablespoons of white vinegar

- Pepper
- Chopped chives (or your preferred herb)
Method · 45 min
- Pour the milk into a large saucepan.
- Place the thermometer inside the saucepan to monitor the temperature: the milk should reach 85°C. If you don't have a thermometer, heat it until it just begins to steam and form small bubbles, without letting it boil.
- Remove the saucepan from the heat, add the white vinegar and mix gently for a few seconds.
- Once the milk has curdled, let the mixture rest for 10 minutes, always off the heat.
- Transfer the mixture to a colander covered with a clean cloth and let it drain for about 15 minutes.
- Once all the whey has drained, transfer the cottage cheese to a bowl and season to taste. In our case, we added salt, pepper, and chopped chives.
- And that's it. You can serve it, for example, on a slice of toasted bread.
