Cold pasta with gazpacho, a fresh and tasty summer recipe

Materials

  • 190g of spaghetti
  • 150 ml of gazpacho
  • 60g of feta cheese
  • 35g of sun-dried tomatoes
  • 1 tablespoon of olive oil (approximately)
  • Pepper to taste
  • Fresh basil
Method · 16 min
  1. Cook the spaghetti in plenty of boiling salted water for the time indicated on the package, in this case 11 minutes. Once cooked, rinse them with cold water to cool them and drain well.
  2. Cut the sun-dried tomatoes into small pieces and crumble the feta cheese.
  3. Divide the gazpacho among the plates.
  4. Add the pasta and mix well so that it is coated with the gazpacho.
  5. Add the sun-dried tomatoes and crumbled feta on top.
  6. Finish with a drizzle of olive oil and pepper to taste. Garnish with a few fresh basil leaves and serve. And that's it!

What type of pasta is best for making cold pasta with gazpacho?

Spaghetti works really well because it soaks up the gazpacho easily, although you can also use short pasta, such as fusilli, penne, or farfalle. The important thing is to cook it al dente so that it retains a pleasant texture once chilled.

Yes. In this recipe, it's best to cool the water after cooking to stop the heat and prevent it from warming the gazpacho. Then, drain it very well so that the excess water doesn't dilute the sauce.
