  • eggs - 3 pcs. (separate one yolk)
  • sol - 1 tbsp is equal to
  • sugar - 1 tbsp.
  • fresh milk - 300 ml
  • yogurt - 1 tbsp.
  • oil - 6 tbsp.
  • dry yeast - 1 packet
  • flour - about 700 g
  • cheese - 300 g for sprinkling
  • butter - 100 g melted for spreading

Method · 1 h 30 min
  1. Knead a soft dough from the dough ingredients, the ingredients should be at room temperature and the milk slightly warmed.
  2. Leave the dough in a warm place to double in size. Divide the risen dough into 8 equal parts, shape them into balls, brush them with a little oil (so they don't get a skin) and let them rest for 15 minutes.
  3. Grease the work surface with a little oil, roll out each ball individually and sequentially with a rolling pin, brushing with melted butter and sprinkling evenly with crumbled cheese.
  4. Roll them up and arrange them in a circle in a pre-oiled pan, starting from the middle and working towards the sides (like a snail).
  5. Let the shaped twisted banitsa increase in volume for about 30 minutes, brush it with the previously beaten egg yolk with 1 tbsp. oil, distribute the butter cubes on top and bake in a preheated 150 degree oven for 10 minutes until puffed up, then increase the temperature to 180 degrees until done and nicely browned.
