American pralines

Ingredients · Servings 20
  • milk chocolate - 150 g
  • peanut butter - 2 tbsp with peanut pieces
  • milk chocolate - 150 g
  • cream - 150 ml Liquid pastry cream
  • roasted peanuts - 70 g
  • sugar - 70 g granulated
  • peanuts - for decoration
Method · 25 min
  1. For the base, melt the milk chocolate in a water bath and add the peanut butter. Stir until smooth.
  2. Place the base in mini paper capsules and place in the refrigerator to set.
  3. For the cream, place the sugar in a small saucepan and melt until it forms a light caramel.
  4. Once the caramel is ready and still hot, add the roasted, peeled peanuts to it. Stir well so that it can stick to them and transfer them to baking paper until they cool.
  5. The cooled caramelized peanuts must be ground very well, for which you will need a powerful blender. The liquid cream is heated until it boils and poured over the chocolate, which must be broken into small pieces and placed in a bowl.
  6. Wait about 1 minute for it to soften and stir well until a homogeneous mixture is obtained.
  7. Mix the peanuts with the caramel powder together with the chocolate mixture, stir well. Place the mixture in a bag.
  8. The resulting peanut praline is piped onto the chocolate base. Leave in the refrigerator for about 20 minutes to allow the praline to set. A peanut is placed on top of each praline for decoration.
