Soft sugar pie: the best recipe
Can the pie be prepared in advance and reheated without the sugar hardening or becoming grainy?

- 250 g flour
- 1 sachet of baker's yeast
- 25g caster sugar
- 25 g milk
- 100g margarine or butter
- 2 egg units
- 1 egg yolk
- 25 g milk
- 125g caster sugar
- 5 small butter nuts
Method · 15 min
- In a mixing bowl, combine the flour, sugar, and yeast.
- Meanwhile, melt the margarine with the milk in the microwave for 30 seconds.
- Incorporate the melted butter and mix.
- Add the eggs one by one to obtain a fairly soft ball of dough.
- Place the dough on baking paper and spread it into a disc of about 30 cm using the back of a spoon. Let it rest for 2 hours at about 25°C.
- Mix the egg yolk with the milk and spread it over the pastry. Then, sprinkle with sugar and dot with 5 small pieces of butter. Bake for 25 minutes at 200°C (400°F).
Yes, you can prepare the tart in advance and store it at room temperature. To reheat it without the sugar hardening, gently warm it in the oven at 150°C (300°F) for about 10 minutes. This will allow the sugar to melt slightly again without altering the texture of the filling. Avoid using a microwave, as this could make the filling too runny.
