Parelcouscous recept met feta

We have created another delicious pearl couscous recipe for you. Pearl couscous is a very tasty base for salads. It consists of small balls, making it rounder and thicker than regular couscous, and the flavor is also somewhat richer. Unlike regular couscous, pearl couscous needs to be cooked briefly.

Ingredients · Servings 4
  • 2 courgettes
  • 4 plum tomatoes
  • 10 g fresh thyme
  • 2 stand-up pouches of chickpeas
  • 2 tsp paprika
  • 2 shallots
  • 4 cloves of garlic
  • 1 citroen
  • 335 gr parelcouscous
  • 125 gr more
  • 600 ml vegetable stock
  • Olive oil
  • 2 tablespoons butter
  • salt and pepper
Method · 40 min
  1. Preheat the oven to 200 degrees Celsius (fan-assisted).
  2. Prepare the broth.
  3. Cut the courgettes into half slices and the plum tomatoes into wedges. Mix the courgette, tomato, and half of the thyme sprigs in a bowl with 3 tablespoons of olive oil, pepper, and salt. Spread over one side of a baking sheet lined with parchment paper.
  4. Pat the chickpeas dry with paper towels. Mix the chickpeas in the same bowl with the paprika powder, 1 tablespoon of olive oil, and salt and pepper. Spread over the other half of the baking sheet lined with parchment paper.
  5. Bake the vegetables and chickpeas in the oven for 20 minutes, or until the chickpeas are golden brown. Stir halfway through.
  6. Slice the shallots into thin rings. Press the garlic or chop finely. Squeeze the lemon.
  7. Meanwhile, heat the butter in a wok or sauté pan with a lid. Sauté the garlic and shallot for 2–3 minutes over medium heat. Add the pearl couscous and the remaining sprigs of thyme and stir-fry for 2–3 minutes, or until the pearl couscous is lightly toasted. Add the stock and let the pearl couscous simmer gently for 12–14 minutes. Add some extra water if the pearl couscous dries out too quickly.
  8. Crumble the feta. Add the roasted courgette, the tomato, 2 tsp lemon juice per person, and half of the feta to the wok or sauté pan with the pearl couscous. Season to taste with salt and pepper.
  9. Serve the pearl couscous in a bowl or a deep plate. Garnish with the chickpeas and the remaining feta.
