French toast with blueberry compote

We all grew up with French toast, didn't we? Stale bread was given new life by dipping it in a mixture of milk and egg. What you get are delicious sweet rolls that are crispy on the outside and soft on the inside. This French toast recipe with blueberry compote is truly delicious.

Ingredients · Servings 2
  • 4 slices of bread (e.g. brioche or white spelt bread)
  • 200 ml milk
  • 1 no
  • 1 tsp cinnamon
  • 1 sachet of vanilla sugar
  • Butter for frying
  • 250 g blueberries (frozen)
  • A squeeze of honey
  • A small splash of water
  • 2 tsp cornstarch + 1 tbsp water
  • Greek yogurt
  • Blueberries
Method · 20 min
  1. Mix the milk with the egg, vanilla sugar, and cinnamon using a fork or whisk. Dip the slices of bread into the egg mixture. Fry the bread until golden brown on all sides in a frying pan with a knob of butter.
  2. In the meantime, make the blueberry compote. Place the blueberries in a small saucepan over the heat. Add a splash of water and a squeeze of honey. Bring gently to a boil and then let it simmer for 5 to 10 minutes. Mix the cornstarch with the water and add this to the compote. Let it continue to boil for a few more minutes while stirring, until it thickens. Then let the compote cool down.
  3. Spread a tablespoon of Greek yogurt and some of the blueberry compote on the French toast, and garnish with blueberries. Serve the French toast immediately.
