Sheet tart with pear and goat cheese
This pear and goat cheese sheet tart is a tasty and quick recipe for the weekend. I find puff pastry pleasant and easy to work with. You can do so much with it, and the preparation is done in no time. I love that. I made this pear sheet tart by joining four slices of puff pastry together.
Pears are available all year round. The pear season in the Netherlands runs from September through May. But in principle, you can make this tart all year round. Not a big fan of pears? You can, of course, make this sheet tart with other fruit. How about apples? Or nectarines? I think that would be tasty too. And the preparation is actually the same. Want to add a bit more kick? Then you could also use blue cheese. This sheet tart is easy to prepare. It will be on the table within half an hour. So, if you suddenly have guests over or have something to celebrate, this tart is a great option.

- 1 sheet tart: 4 slices of puff pastry
- 2 pears
- 125 g soft goat cheese, a squeeze of lemon juice
- 1 egg
- 1 tbsp honey, a sprig of thyme
Here's how to make it. Preheat the oven to 220 degrees Celsius (fan-assisted).
Let the puff pastry slices thaw. Join the puff pastry slices together by pressing the edges. You can use a rolling pin for this if desired.
Fold the outer edge inwards. Prick holes in the bottom with a fork. Place the puff pastry on a baking sheet lined with parchment paper.
Spread the soft goat cheese over the puff pastry. Cut the pears in half and slice them thinly. Sprinkle the pear with some lemon juice.
Distribute the pear slices over the goat cheese. Drizzle some honey over it and place some thyme on top.
Beat an egg and brush the edges of the sheet cake with the egg yolk.
Place the sheet cake in the oven for 15 minutes. You can serve the sheet cake cold or (half) warm.
