Ponzu

Ponzu

Ponzu is a citrus-based sauce commonly used in Japanese cuisine. It is acidic, with a thin, watery consistency and a dark brown color. Ponzu shōyu or ponzu jōyu is ponzu sauce with added soy sauce (shōyu), and the mixed product is widely referred to simply as ponzu.

Ingredients · Servings 1
  • 1 tablespoon of lemon juice
  • 1 tablespoon of soy sauce (shoyu)
  • 1 teaspoon of white sugar
  • 1 teaspoon of warm filtered water
  • 1 tablespoon of lemon juice
  • 1 tablespoon of soy sauce (shoyu)
  • 1 tablespoon of mirin
  • ½ cup of soy sauce (shoyu)
  • ½ cup of citrus fruit juice (lemon, lime, orange, grapefruit, or a combination of these)
  • 1 portion of lemon peel (without the white part) ((1 lemon))
  • 2 tablespoons of mirin
  • ½ cup of katsuoboshi (dried bonito flakes, smoked)
  • ½ piece of kombu (a type of seaweed)
Method · 10 min
  1. Sugar: Mix the spoonful of sugar with the spoonful of hot water to dissolve the sugar.
  2. Mix: add the other ingredients.
  3. To use: Can be kept refrigerated for up to 1 week. Makes 3 tablespoons of ponzu sauce.
  4. Mix: Mix all the ingredients together.
  5. To use: Can be kept refrigerated for up to 1 month. Makes 3 tablespoons of ponzu sauce.
  6. Grate: grate the lemon zest.
  7. Juice: Mix the lemon and orange juice. We suggest 3/4 lemon juice and 1/4 orange juice to make the mixture, which should be 1/2 cup of juice in total.
  8. Mix: Mix all ingredients in a clean, airtight container.
  9. Marinate: Let it marinate in the refrigerator for at least 12 hours (up to 1 week).
  10. Strain: strain the liquid to remove the katsuoboshi (bonito flakes) and kombu.
  11. To use: Can be kept refrigerated for up to 1 month. Makes 1 cup of ponzu.

Ponzu Recipe

Ponzu can be purchased at specialty Japanese food stores. Below are 3 ponzu recipes. The simplest recipe uses sugar instead of mirin. The second simplest ponzu recipe uses mirin, while the traditional recipe uses katsuoboshi (dried bonito flakes) and kombu (a type of seaweed).

  • Juice: Mix the lemon and orange juice. We suggest using 3/4 lemon juice and 1/4 orange juice to make the mixture, which should be 1/2 cup of juice in total.
