Cabbage all year round: Cabbage recipes & information

1. Kalettes

Season: November–March

Kalettes are a cross between spring sprouts and Brussels sprouts. Try them in a winter Buddha bowl or with gnocchi!

2. Weisskabis

Season: year-round

Whether for cabbage rolls, coleslaw, or pulled pork burgers – white cabbage is versatile. It is most often found in the form of sauerkraut.

3. Kale

Season: October–March

Whether in a smoothie, as chips, or in a salad: kale strengthens your immune system! It tastes best after the first frost.

4. Chinakohl

Season: May–March

Chinese cabbage is a great addition to a delicious Mah-Meh. But it's also fantastic roasted in the oven with almonds and lemon.

5. Wirz

Season: year-round

Savoy cabbage is rich in vitamin C and strengthens the immune system. It is particularly easy to digest if you add a teaspoon of baking soda to the cooking water.

6. Romanesco

Season: May–November

The nutty Romanesco goes perfectly with spaghetti or in a warming soup with a dollop of whipped cream.

Did you know? Broccoli and cauliflower are summer vegetables: they are in season from May to November.

7. Red cabbage

Season: year-round

What would winter be without red cabbage? Cooked with apples, served with chestnuts, or baked in the oven. Anything goes.

8. Brussels sprouts

Season: September–January

Whether fried, roasted, or steamed, Brussels sprouts are tender and delicate. Tip: Cut a cross in the stem to ensure the sprouts cook evenly.

9. Spitzkohl

Season: June–February

Finely sliced ​​pointed cabbage is a secret tip when served as a salad with nuts, parsley and crème fraîche.

10. Broccoli

Season: May–November

A versatile and easily digestible cabbage, rich in vitamins, perfect for soups, pasta, gratins, and more. This summer/autumn variety retains its vibrant green color if you blanch it briefly. Did you know? You can also eat broccoli raw: the raw florets, finely chopped, are delicious in salads.

11. Pak Choi

Season: April–November

Pak choi is a close relative of Chinese cabbage. It is a common ingredient in Asian stir-fries. It is a typical summer and autumn cabbage, with a season lasting until November.

12. Ground kohlrabi

Season: July–April

Raw kohlrabi is perfect as a crunchy dipping vegetable. Cooked, it has a slightly sweet taste – kohlrabi puree is especially popular with children!
