Ingredients · Servings 10
  • green onions – 0.5 bunch
  • salt – to taste
  • grated Parmesan – 50 g
  • canned sprats in oil – 200 g
  • eggs – 2 pcs.
  • cherry tomatoes – 200 g
  • cream with 22% fat content – 300 ml
  • potatoes – 150 g
  • flour – 200 g
  • butter – 100 g
  • egg – 1 pc.
  • salt – 0.5 tsp.
Method · 1 h 30 min
  1. Cut the cold butter into cubes. Combine the flour and salt in a food processor, add the butter, and pulse until the mixture resembles crumbs. Add the egg and pulse until the dough is smooth. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Roll out thinly on a floured surface.
  2. Preheat oven to 180°C. Grease a springform pan with butter and line the bottom with parchment paper. Carefully place the dough into the pan, trimming any excess. Prick the dough with a fork.
  3. Cover the pan with parchment paper and sprinkle with dried beans. Bake for 10 minutes. Remove the beans and parchment paper, and bake for another 5 minutes.
  4. Peel the potatoes and boil them in salted water for 8 minutes, until half-cooked. Drain, let cool, and slice. Wash the tomatoes and cut them in half. Wash and chop the green onions.
  5. Whisk the cream, eggs, and Parmesan in a large bowl. Season with black pepper and sprinkle with chives.
  6. Place the potatoes and tomatoes on the dough. Pour in the creamy mixture. Arrange the sprats on top. Bake for 35 minutes, until the filling thickens and turns golden. Serve the quiche hot or cold.

Spinach and cheese quiche is a pie with French roots. The classic version, topped with smoked bacon, was invented in Lorraine. Initially, the pie was made with bread dough, but this was later replaced by thin shortcrust or puff pastry. The idea of an open pie with an egg and milk filling was so successful that variations on this theme were inevitable: quiches were made with mushrooms and fish, meat and chicken, asparagus, zucchini, and other vegetables. In France, such pies are traditionally served as an appetizer before the main course, along with a salad, or for lunch. When to enjoy a spinach and cheese quiche is up to you: the pie is so delicious that we think any time of day is appropriate for enjoying it!

If you've ever made a spinach quiche, you'll be quite surprised by our version, thanks to the sprat in the filling. Is it worth it? We're sure it is! This fish imparts a truly unique flavor to the dish, making it stand out from the crowd. Incidentally, there's an incredible variety of fillings for this pie! Quiches are made with mushrooms (wild or button mushrooms), vegetables (from asparagus to carrots), meat and chicken, bacon, and salmon. And it would be a thankless task to decide which option is best.
