- Start by carefully weighing all the ingredients. For a perfect cake, make sure to use room temperature eggs. Melt the butter in the microwave for a few seconds at 800 watts. Meanwhile, in a large bowl, crack the eggs and add the granulated sugar.
- Using an electric mixer (or a hand whisk), beat the eggs and sugar until pale. Then, slowly pour in the warm melted butter. Add the two cups of espresso and the room-temperature water to the liquid mixture, stirring well to combine. In a separate bowl, sift the flour, cocoa powder, and baking powder. Add a pinch of salt and mix the ingredients together with a fork until smooth.
- Finally, combine the dry ingredients with the liquid ones, incorporating them with an electric mixer until smooth. Meanwhile, preheat the oven to 180°C (350°F). Grease and flour a 24cm springform pan. Transfer the creamy mixture to the pan, smoothing it out evenly. Bake the cake on the middle shelf of the oven for about 35-40 minutes. After the first 30 minutes, test the cake with a toothpick in the center: if it comes out clean, the cake is ready. Turn off the oven and let the cake rest for 5 minutes with the door open before removing it from the oven.
