Jordi Roca and Ibai Llanos team up to make chocolate from scratch

The internet personalities who have starred in the most legendary crossovers in this country have now joined forces in the kitchen to work with cacao, Jordi Roca's star ingredient.

Based on their shared philosophy of learning to value artisanal chocolate, the producers behind it, and their commitment to biodiversity and polyculture, Ibai Llanos discovers the culinary process of transforming the bean into a chocolate bar in the style of Roca.

First, they open the cacao pod to extract the seed inside. This must ferment for a few days; then all impurities are removed, and the cacao is roasted at 125 degrees Celsius for 10 minutes. After roasting, the duo uses a dryer to remove the husks, leaving only the pure cacao.

The mixture they use to make their 70% cacao chocolate consists of a combination of 700 grams of cacao beans and 300 grams of sugar, which they refine in a mill. The cacao fat particles are then combined with the sugar particles, and the mixture is tempered by gradually lowering the temperature. Finally, Ibai pours the mixture into a mold and chills it in the refrigerator for 7 minutes. The result? A 10/10 chocolate, as the streamer exclaims.
