Miso Soup with Baby Bok Choy and Pork Recipe

Today’s miso soup is made with baby bok choy and pork. There is a little twist using a vegetable from traditional Chinese cuisine. Add some Ra-Yu red chili oil in the end for some spiciness, and hopefully you will enjoy the combination.

Ingredients · Servings 4
  • 4 cups Dashi
  • 2 baby bok choy
  • 5 oz pork (thinly sliced)
  • 4-5 Tbsp Miso paste
  • 1 tsp Ra-Yu (chili oil)
Method · 5 min
  1. Make Dashi using an instant Dashi packet. Or make broth according to our Dashi recipe.
  2. Cut bok choy into 1" (2.5 cm) width pieces. Cut pork into bite-size pieces.
  3. Cook pork in a non-stick pot until browned. Add bok choy and cook for a minute. Add Dashi and cook for another couple of minutes. Dissolve Miso paste in the Dashi. Drizzle Ra-Yu in the soup.

We used a convenient Dashi packet to make fish broth here, but you can use any type of Dashi. Please check Back to Basics: How to Make Dashi to learn more about different types of Dashi.
