Oven-Baked Pineapple Jerk Chicken

  • 3 tablespoon jerk seasoning
  • 1/4 teaspoon black pepper
  • 2 tablespoon dark soy sauce
  • 1/2 scotch bonnet pepper (diced, seeds removed)
  • 4 cloves garlic (diced)
  • 1 can chunky pineapple
  • 3 stalks scallions (chopped)
  • 6-8 sprigs thyme
  • 1 tablespoon brown sugar
  • 1/4 cup orange juice
  • 1 tablespoon olive oil
  • 2 whole chicken (about 5 lbs)
Method · 1 h 10 min
  1. Mix all ingredients except chicken in a large bowl, bruising thyme to release oils.
  2. Marinate chicken in mixture for at least 2 hours, or proceed immediately.
  3. Preheat oven to 410 °F (210 °C). Line a pan with foil.
  4. Arrange chicken pieces skin side up; roast uncovered for 1 hour 15 minutes.
  5. Broil briefly to crisp skin if needed, watching carefully.
  6. Let rest a few minutes, then serve.
