Baked oatmeal with banana

Baked oatmeal with banana is a great way to serve oatmeal in a delicious way. The aroma of baking bananas fills the kitchen. This recipe will surprise you.

  • whole grain or regular oat flakes 150 g - 1 cup
  • 2 bananas
  • regular or plant milk, e.g. coconut milk 400 ml
  • raisins or dried cranberries 50 g
  • favorite honey 2 tablespoons
  • butter 1 tablespoon
  • cane sugar 1 teaspoon

Baked oatmeal with banana

Choose a small baking dish (mine has internal dimensions of about 15 x 22 cm). Pour in 150 grams of regular or whole-grain flakes. If you only have mountain or instant flakes, use 130 grams of those.

Tip: You can also prepare the porridge in several smaller ramekins (4-6). Divide the ingredients evenly between each dish. This will reduce the baking time by up to 10 minutes.

Start preheating your oven now. Set it to 180 degrees Celsius with top/bottom heat.

In a small pot, place 400 ml of milk. Add a tablespoon of butter, 50 grams of raisins, and one tablespoon of honey. Heat for a few minutes until the butter melts. The milk doesn't need to boil; it just needs to be hot.

Tips: You can replace regular milk with your favorite plant-based drink (even sweetened). Dried mulberries, physalis, or goji berries can be used instead of raisins or cranberries. Feel free to enhance the milk's flavor by adding a teaspoon of cocoa or a pinch of cinnamon. Apple pie spice also works well here.

Pour the entire contents of the pot into the bowl with the cereal and lightly mix the cereal with the milk.

Peel and slice a ripe banana. Spread them evenly in the bowl with the cereal, which has already softened from the warm milk. Peel the second banana and cut it in half lengthwise. Place it on top. If your bowl is shaped differently, cut the banana into any pieces you like. Cover the remaining banana pieces with the remaining honey (the second tablespoon from the list).

Tip: Along with the bananas, you can also add crushed walnuts or chopped chocolate (dark or dark).

Place the dish on the middle rack (preferably on the included rack) in an oven preheated to 180°C (350°F) (top/bottom setting or 170°C (fan-assisted). Bake the oatmeal for about 25 minutes. Carefully remove the dish for the last two minutes and sprinkle the top of the oatmeal with a teaspoon of brown sugar. If necessary, briefly grill the top to brown the bananas. Baked oatmeal with banana is best served warm. This makes four servings, which you can serve plain or with roasted apple, yogurt, vanilla cheese, or whipped cream. You can also sprinkle the finished portions with cinnamon.
