Sustainable, signature cuisine has found one of its most powerful and distinctive voices in Lara Roguez. After establishing her restaurant Abarike in Gijón as an undisputed benchmark for new seafood recipes, the Asturian chef has arrived in Madrid to lead BumpGreen's new gastronomic phase.

Located on Fortuny Street, within the One Shot Fortuny boutique hotel, BumpGreen isn't a newcomer, but it has completely revamped its culinary offerings. In this new phase, Lara hasn't come to replicate formulas. She's come to create. To reinterpret plant-based cuisine from an Atlantic perspective, where green is not at odds with flavor or emotion. Her deeply seasonal approach respects origin and celebrates it with creativity. Dishes like the Cantabrian bonito sunomono in escabeche or the zucchini, mushroom, and Manchego cheese tagliatelle reflect her signature balance between technique and sensitivity, between memory and travel.

From the Cantabrian coast to the capital: a chef with her own identity

It's no surprise that BumpGreen has chosen her to revamp their menu. Lara has spent years building an admirable career, both for the demanding nature of her cuisine and her commitment to sustainability. Trained in Wales and honed under the tutelage of chefs like Nacho Manzano, her name began to resonate in the world of haute cuisine after the success of Abarike, a restaurant that in less than a year was recognized by the Michelin Guide for its work with seafood and its commitment to traceability. In her kitchen, every ingredient has a face, a story, a season.

This approach has now moved to the capital, where BumpGreen has become a small green haven for the palate. There are nods to quality protein—like the pork tenderloin with pumpkin cream or the prawn burger—but the real stars are the expertly prepared vegetables, homemade stocks, fermented ingredients, and a cooking style that truly listens to the product.

The wife, an interior designer by profession, was responsible for shaping the space, combining natural aesthetics, premium materials, and lush vegetation. The result is an elegant and inviting environment, perfect for leisurely enjoyment.

With their sights set on their upcoming opening in Valencia—at the iconic Hotel Reina Victoria—BumpGreen and Lara Roguez confirm that the new green cuisine in Spain has a northern accent, deep roots, and a bright future. In their hands, sustainability ceases to be a slogan and becomes an experience.
