Delicious Recipes: Upside-Down Mandarin Cake

This upside-down mandarin cake recipe, with its sweet and fruity aroma, will brighten your table and stands out with both its visual appeal and taste. Ingredients · Servings 8
  • 5 tangerines
  • 2 tablespoons of butter
  • 1/2 cup powdered sugar
  • 3 eggs
  • 1 cup of powdered sugar
  • 1 cup of sunflower oil
  • 1/2 cup milk
  • 3 cups of flour
  • 1 packet of baking powder
  • 1 packet of vanilla
  • You can use oranges, blood oranges, or limes instead of tangerines.
  • For a sweeter and more aromatic taste, you can replace some of the mandarins with canned mandarins.
  • You can use olive oil or melted butter instead of sunflower oil.
  • You can achieve a different texture by adding almond milk, soy milk, or a 50/50 mixture of milk and yogurt instead of regular milk.
  • Instead of granulated sugar, you can use brown sugar, coconut sugar, or honey (reduce the amount of liquid slightly when adding honey).
  • You can enhance the flavor of the caramel by adding a little cinnamon or vanilla extract.
  • You can use whole wheat flour, almond flour, or oat flour instead of white flour.
  • Instead of baking powder, you can use cornstarch and baking soda together to achieve a lighter leavening effect.

  1. 1. Place your pan over medium heat and add the granulated sugar to the bottom, melting until it turns caramel colored.
  2. 2. Next, add the butter and simmer until you have a smooth caramel sauce.
  3. 3. Pour the prepared caramel into the bottom of a 24–26 cm diameter springform cake pan lined with baking paper and spread evenly.
  4. 4. Peel the mandarins, cut them in half, and arrange them so that the flesh side down is on top of the caramel.
  5. 5. Lightly whisk the eggs in a mixing bowl, then add the powdered sugar and continue whisking until the mixture becomes frothy.
  6. 6. Next, add the sunflower oil and milk and mix until you obtain a homogeneous mixture.
  7. 7. Sift the flour, baking powder, and vanilla into the liquid mixture and gently mix with a spatula, stirring from the outside inwards.
  8. 8. Pour the prepared cake batter over the mandarins and smooth it with a spatula.
  9. 9. Bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) using the top and bottom heating element setting for approximately 45–50 minutes.
  10. 10. After removing from the oven, let the cake rest for 5–10 minutes, then carefully invert it onto a serving plate.
