Ferin goosht-pata

The secret to Iranian meat stew is onion, crushed tomatoes, and spices familiar from baking. And of course, time.

Ingredients · Servings 6
  • 1 kg naudan paahtopaistia tai lampaanpotkaa
  • 2-3 (300 g) iso sipulia
  • 4 valkosipulinkynttä
  • noin 3 rkl rypsiöljyä
  • 10 neilikkaa
  • 1-2 tl kokonaisia kardemumman siemeniä
  • 1-2 tl suolaa
  • 1 tl currya
  • 1 tl jauhettua korianteria
  • 1 tl chiliä
  • 1/2 tl kokonaisia mustapippureita
  • 1 kanelitanko
  • 400 g tomaattimurskaa + vettä
  • 1 iso keitetty punajuuri
  • 7 dl turkkilaista jogurttia (10% rasvaa)
  • ripaus suolaa

  1. Leikkaa paisti muutamaksi isoksi palaksi. Tässä padassa lihapalat saavat olla isoja. Hienonna sipulit ja valkosipulinkynnet.
  2. Kuumenna öljy laakeassa kasarissa tai padassa. Kuullota sipulia 10-15 minuuttia keskilämmöllä tai kunnes ne ovat kauniin kullankeltaisia ja tuoksuvia. Lisää valkosipuli ja kuullota vielä hetki.
  3. Lisää lihapalat sipulin joukkoon. Lisää lämpöä ja paista lihoja noin 10 minuuttia niin, että lihat hieman ruskistuvat kauttaaltaan. Pidä lämpö sellaisena, että lihat ruskistuvat mutta sipulit eivät ala ruskistua. Lisää kaikki mausteet ja paista vielä 5-7 minuuttia.
  4. Lisää tomaattimurska ja saman verran kylmää vettä. Käytä tomaattimurskapurkkia mittana. Sekoita. Kun tomaattiliemi alkaa kuplia, vähennä lämpöä.
  5. Anna padan kypsyä hissuksiin keskilämmöllä kannen alla vähintään 45-50 minuuttia. Mitä kauemmin annat padan kypsyä, sitä ihanampaa siitä tulee. Tarkista lihan pehmeys välillä ja sekoita, jotta lihapata ei pala. Vähennä tarvittaessa lämpöä tai lisää tilkka vettä liemeen.
  6. Käytä kaupan valmiita, keitettyjä punajuuria tai kypsennä punajuuri pehmeäksi ja kuori se.
  7. Raasta punajuuri raastimen karkealla terällä ja laita raaste reilun kokoiseen kulhoon. Lisää joukkoon reilusti jogurttia, noin 7 dl. Mausta ripauksella suolaa.
  8. Halutessasi voit viimeistellä tahnan tuoreella lehtipersiljalla.

Feri Ghashghaei, an Iranian living in Finland, has long run the kitchen and catering at his family restaurant. His signature dishes include bagheli polo goosht, or meat stew, which is served with festive rice seasoned with saffron and layered with plenty of dill and broad beans.

The rice is prepared in much the same way as traditional tahdig, i.e. first the rinsed or soaked rice is cooked until al dente, rinsed with cold water and finally cooked in a cauldron by steaming it so that potato slices are placed on the bottom of the cauldron and the rice forms a crispy potato surface.

The spices for the meat stew can be found at a regular grocery store. Feri uses whole, black cardamom pods in the stew, but they can easily be replaced with whole cardamom seeds.

The stew cooks in an hour, but it's even better when it's simmered under a lid on low heat for twice as long. The meat becomes fall-apart tender. The best part, however, is the dark, thick gravy, the color of which resembles Mexican mole. If at first it seems like a small amount of onion is drowning in the stew, at this point you'll understand why you need a LOT of it. The onion's job is to thicken the stew, and the long simmering ensures that the onion and tomato intertwine to form a delicious, thick, paste-like sauce.

I made the stew with roast beef, but a slightly fattier meat would definitely be a great option here. In fact, Feri said he most often uses lamb shank for the stew.

Boiled rice and especially Iranian crispy tahdig are a perfect side dish for this stew. Even a beginner can make it with Samin Nosrat's tahdig recipe.

A dollop of thick, Turkish yogurt is also a fun side dish. An even better side dish is yogurt-beetroot paste, or mast o labu. It is made by adding a little boiled, grated beetroot to yogurt. Salt is all that is needed to season this pink delicacy.
