Chicken Caesar Garlic Sliders

- 1 tbsp finely chopped parsley
- 1 pack slider buns
- 4 chicken breasts
- 2 eggs (beaten)
- 1 cup all purpose flour
- 1 cup italian bread crumbs
- salt & pepper
- 1 egg yolk
- 3 anchovies (or 2-3 tsp anchovy paste)
- 2 tsp garlic (minced)
- 1 tsp dijon mustard
- 3 tbsp finely grated parmesan
- 1/4 cup oil
- 1 head romaine (chopped)
- extra parmesan for garnish
- Whisk yolk, anchovy, garlic, lemon, Dijon, and salt.
- Slowly stream in oil while whisking until thick and creamy.
- Stir in parmesan.
- Reserve ~5 tbsp for assembly.
- Toss romaine and croutons with remaining dressing and refrigerate.
- Pound chicken to even thickness; season with salt and pepper.
- Dredge in flour → egg → bread crumbs.
- Fry at 350°F for 3–5 minutes per side until golden and cooked through.
- Drain on paper towels.
- Melt butter; stir in garlic powder and parsley.
- Brush onto split buns and bake at 350°F for 5–10 minutes.
- Broil 1 minute for extra color if desired.
- Spread reserved Caesar dressing on bottom buns.
- Add fried chicken.
- Pile on dressed romaine.
- Finish with extra parmesan and top bun.
