Wing Dog Korean Style

Skewer the boneless wings, mix a simple rub from salt, sugar and paprika and marinate the wings with it – let them rest for 4 hours. 24 chicken wings, 3 tbsp sugar, 1.5 tbsp salt, 3 tbsp sweet paprika powder.

  • 24 Chicken Wings
  • 3 tablespoons of sugar
  • 1.5 tbsp salt
  • 3 tablespoons sweet paprika powder
  • 4 tablespoons of plum jam
  • 2 The Honey
  • 1. The Engineer
  • 1 tbsp garlic
  • Juice and zest of 1 lime
  • 8 hot dog buns
  • 8 tablespoons of coleslaw
  • 8 The Sesame Prize
  • 4. Mayonnaise
  • 2. Misopaste
  • 0.5 chili pepper
  • 1 lime
  • 2 tbsp soy sauce
Method · 5 h 35 min
  1. Skewer the boneless wings, mix a simple rub from salt, sugar and paprika and marinate the wings with it - let them rest for 4 hours.
  2. Prepare the grill - 180°C - indirect heat
  3. For the plum ketchup, mix all the ingredients together.
  4. Place the skewers on the grill, turn them over after 20 minutes, and grill for another 20 minutes.
  5. Glaze the wings repeatedly for 10 minutes.
  6. In the final step, mix the mayo, miso paste, lime juice, and chili. Top the hot dog with coleslaw, add the wings, drizzle with the mayonnaise, and sprinkle with sesame seeds.
  • For the plum ketchup, mix all ingredients together: 4 tbsp plum jam, 2 tbsp honey, 1 tbsp ginger, 1 tbsp garlic, 1 lime juice and zest, 2 tbsp soy sauce.
  • In the final step, mix the mayo, miso paste, lime juice, and chili. Top the hot dog with coleslaw, add the wings, and drizzle with the mayonnaise mixture – sprinkle with a little sesame. 8 hot dog buns, 8 tbsp coleslaw, 8 pinches of sesame seeds, 4 tbsp mayonnaise, 2 tbsp miso paste, 1 lime
